Jenny's Pork Tenderloin with Chimichurri

I am catching up on a ton of recipes that I missed over the past several weeks.  I am finally feeling like life is under control and I am back in the kitchen more.  Hopefully I can keep it up!

This last week I made the pork tenderloin with chimichurri.  I thought it sounded good and looked good, until I was chopping up all of the herbs, etc.  I texted Kim and told her it just wasn't sounding good to me anymore.  She reassured me and told me that dinner never sounds/looks good at 11 in the morning!  Anyway, I finished the chimichurri and got my pork marinating fairly early in the day because I knew I wouldn't be able to get to it later.

Well, my husband and I thought this was delish.  It tasted, smelled, and looked so fresh.  The chimichurri had a wonderful flavor.  I don't cook pork tenderloins very often, but I would definitely use this recipe again.  I made the chimichurri exactly as the recipe says, even using the fresh oregano.  I didn't grill the tenderloin though, just cooked it in the oven.  It turned out wonderfully moist and tender.  But I can imagine the grill would add just that much more flavor.

Jenny's Southwest Burgers


I just made these a couple of nights ago and they were really good!  My husband and I both liked them a lot and it was a fun departure from just your normal burger.

After reading Leslee's review I decided not to put the chopped up Chipotle peppers in the burgers.  I did add a little bit of extra adobo sauce to make up for it though.  I also didn't have the chopped onion to put in the burgers.  Other than that I followed the recipe.

The sauce is what really makes these burgers great.  I would say to add it liberally to your burger.  I used pepper jack cheese on the burger as the recipe suggests, but I really love queso fresco too and I think that would be good as well.

This was a fun and tasty recipe and I think it would be a good one to make if you were having friends over for a BBQ.

Jenny's Meatballs and Pudding Pops


I made the sweet and sour meatballs a couple of days ago.  We all thought they were pretty good.  They were surprisingly quick to make for meatballs.  I used the slow cooker option and I used a tiny bit of pineapple juice, but mostly water, for the sauce.  I think I had about enough pineapple juice to make up for about 1/4 of the liquid needed.  But I still thought the sauce was plenty flavorful and sweet with just that amount of pineapple juice.
 The kids and I made the peanut butter banana pudding pops yesterday.  They had fun helping me and anxiously checked the freezer several times to see if the pudding pops were frozen yet.  Super Target did not carry sugar free pudding (weird!!) so I ended up using regular pudding because I didn't want to go to another store!  The kids loved the pudding pops.  I thought they were yummy too.  They had a very rich flavor and were very sweet.  Next time I will try them with the sugar free pudding.  Then they will be a little bit healthier and maybe not quite as sweet.
Anyway, I would count both recipes as successes!

Leslee’s Recipes

Once again I have a few recipes to post about.  I made the southwest hamburgers last weekend.  They weren’t quite as time consuming as I thought when I first looked at the recipe but not your average burger.  Overall they were very spicy and flavorful! Sean liked them much more than me but they were fun to try.  We ate them with the oven fries and fry sauce.  I have never made the fry sauce with relish but it was good! Also I cooked the sliced potatoes in the microwave for several minutes to really decrease the oven time.

I have made the sweet and sour meatballs several times in the past.  I used the pineapple juice option before put this time I just used water and I think I prefered it that way.  The meatballs are nice and easy to make and we all loved this dinner!

The rocky road ice cream was very good! I bought the little marshmallows in a jar that can be used for a topping.  I didn’t realize they were already hard but they tasted good in the ice cream.

I think I really messed up on the strawberry pudding pops now that I look back at the recipe.  I mixed them up a few days ago and the kids tried them today.  They weren’t very sweet but I now realized I added the wrong amount of pudding mix.  Maybe we will have to try them again.  I will be sure to make the banana pudding pops the correct way:)

New Recipes

Hi ladies,

I am trading places with Sarah since she is in the middle of moving this week.  For the recipes this week I have picked:

Sweet and Sour Meatballs- pg 126- my kids love meatballs and the recipe says it is one of their husband's favorites.

Peanut Butter Banana Pudding Pops- pg 243- I just happen to have exactly one ripe banana!  And they sound pretty healthy and like a fun activity for my kids to help with.
