Jambalaya

While my mom was visiting us, I made the Jambalaya for dinner.  After a little slicing and dicing it came together pretty quickly.  It is a great dinner to cook up beforehand and reheat as needed.  I used left over rotisserie chicken but didn’t have any liquid smoke to add for extra smokiness.  I thought the flavor was just fine without it. Everyone liked it even little Knox! We will for sure make this again.

Yes, I thought this was a tasty recipe and very versatile - you can add leftover meats, vegetables etc to it.
