Rutter's Kitchen-Beef Enchiladas with Red Sauce and Brazilian Cheese Rolls

Here's my plate of food.
We had a fun evening again fixing the recipes.  We used flour and corn tortillas for our enchiladas.  I had the corn and I thought that the enchilada was really good.  Good flavors, but the corn are a little hard to get out of the pan, at least for me.  We all worked on the enchiladas as there was chopping, simmering and assembling to do.  We had to double the recipe for our group.  Some liked the enchilada sauce on their enchiladas and some didn't.  After reading some of the reviews about the spiciness, we just used Colby and cheddar cheese and not the pepper jack.  I think that I would have liked a little pepper jack cheese in mine :) 
Dana and Ashley fixed the Brazilian Cheese Rolls.  Dana finally located the Tapioca Flour at a Health Food Store here in Sapulpa.  I couldn't find it at 2 of our local grocery stores.  They followed the recipe and did use the mini muffin pan to bake them in.  They were kind of a fun roll to fix as we hadn't had something like them before.  They were tasty and best fresh out of the oven.  We also served a tossed salad and black beans and rice with our meal.  Dana baked Banana Walnut Chocolate Chip Cookies which were really good for dessert and of course we had our usual ice cream and strawberries.  I thought that they were tasty recipes, but my guys still prefer our usual beef enchiladas, as they aren't so rich.
