Jacki’s Panzanella

I made this recipe last night to go along with our dinner and I really enjoyed it – something different.  I cut the recipe in half and it made plenty.  The only thing I omitted was the basil – didn’t want to buy it.  It was easy enough to make and the vinaigrette added a really good flavor.  I had some of the leftovers for lunch today and the croutons were actually still a little crunchy.  I have not had a chance to make the yummy sounding/looking Mousse Cake yet but I hope to soon.
