I love, LOVE, L-O-V-E, love potato skins. They are my favorite appetizers when we go out, so I was really excited to make these. I used some small (2 bite sized) yukon golds for this and they were just right!
Loving the bacon and extra sharp chedder.
The only thing I did differently was broiling them for 2-3 minutes at the very end to make them extra crispy!
The perfect man's meal :) This is definitely a keeper.

Oh man...these were so good. I agree!!! Boiling them is such a great idea...I'm gonna have to try that next time.
