Audrey & Dana's Stromboli's & Brownies

Well, we went the easy way with some of the ingredients.  We used store bought pizza crust, shredded mozzarella cheese & a rotisserie chicken.  We followed the recipe except as mentioned about the cheese & chicken.  Like Jacki, we couldn't find in the directions when to use the mozzarella, so we just added it to the inside ingredients, which worked great.  I made the Spinach-chicken Stromboli, Dana made a Spinach-Chicken & Pepperoni Stromboli & then we also made a Chicken & Pepperoni Stromboli.  We did use the cheese & tomatoes in all of them.  We really liked all the flavors.  We really feel that using the rotisserie chicken gave it great flavor, since it also had the dark meat with it and had been cooked with the skin on ;)  I had already made that pizza sauce before & didn't like it too much, so I used another one that I have & it tasted great! 


We also decided to make the Mint Brownies, since we hadn't made them earlier.  We each made a batch of the brownies & since I forgot to get the mint flavoring, we picked the flavors that we wanted from what I had.  Dana split her brownie cake in half & used banana flavoring on one half & coconut on the other.  I just used vanilla, as Brock wasn't too crazy about trying any of the other flavors;) For the chocolate glaze, Dana used the dark chocolate & I used the semi-sweet.  Very good brownies!!  Good flavors...
I think that we will both fix these recipes again ;)

Audrey's Teriyaki Sauce & Bacon-Wrapped Chicken Skewers

Here is the Teriyaki Sauce.  Very simple to make & very tasty.  I think that I actually simmered it too long, as the flavors were strong, but Brock & I liked it.
Next is the skewers.  I followed the recipe, but I forgot to read all the way through the recipe, so didn't allow enough time to marinate my chicken ;(  I highly recommend doing that!  We still thought that it had good flavor, but it would have been more moist & had more flavor marinating it.  Next time :)

Here is the finished product!  We really liked the recipes & I will fix them again.  Our grocery store didn't have the artichokes at the time, so I cooked asparagus instead.  I'll try the artichokes another time.

Jacki’s Spinach-Chicken Stromboli, Sauce

I made these recipes a couple of nights ago for dinner and I have to wonder if I did something wrong because I just didn’t really care for it and everything else I have tried in this cookbook has been so good.  I halved the recipe for everything – dough, garlic bread seasoning, sauce, Stromboli.   I used the breadstick dough recipe in the book pg. 30 and that turned out well.  I made the garlic bread seasoning pg 53 so I could make the pizza sauce and I thought both of those were tasty too.  For the Stromboli I omitted the chicken because it just didn’t sound good to me and I added a little more cheese instead.   We just thought the whole thing didn’t have much taste.  I think I should have added a little more cheese, and more Italian seasoning and maybe even a thin layer of the sauce on the Stromboli before layering the ingredients on.  Did anyone notice the directions didn’t mention anything about layering on the mozzarella cheese?  I would like to make this again to see if I can get the taste level acceptable because I think it could be really good.  Hope to see a few more reviews of these recipes from others.

Bacon Wrapped Teriyaki and Stromboli

We had the Bacon Wrapped Teriyaki Chicken last week and I had to make a few adjustments.  I forgot to grab skewers at the store so I just wrapped the breasts in bacon and marinated and grilled them that way.  They marinate was much thicker than I expected but I think it worked great for chicken and it was really delicious! We also grilled the artichoke that night too.  I prepared it and steamed it quickly in the microwave (on a plate covered in saran wrap) and that seemed to do the trick.  The grilling gave it a nice flavor and both Sean and I liked it! It is always fun to try something new on the grill!

Last night we had the Stromboli and it was so yummy! I ended up using a gluten free dough which was a bit harder to work with but besides that the prep was really easy.  We left out the spinach but added in a few pepperonis and olives with the other ingredients.  For the sauce I accidentally bought tomato sauce instead of paste but made that work.  The label said it was basically tomato paste with water and some spices so I just added a few more spices that the recipe called for a long with the sugar.  It made a really good dip for the Stromboli.

Recipes for the week

Hi girls!

Sorry for the long absence from the blog. I feel like I'm just settling back into 'normal' life after having a baby, and then having a sick baby, adjusting to 3 kids, etc. But hopefully I can start contributing more to the posts!!

Anyway, for the recipes this week let's try spinach-chicken stromboli on page 160-161. I am sure you can just adapt the recipe to whatever toppings you would like in there, but I think it sounds good! It says to serve with a pasta sauce, so let's try the pizza sauce on page 155. It sounds really easy.

Jacki’s Bacon Wrapped Teriyaki Chicken Skewers

We just had these today for Sunday dinner and man were they good!  I assembled them this morning so they could marinate for several hours.  The whole process was a little lengthy so as I was making them I was quite sure they were not worth the time but I was wrong.  Definitely worth the hassle.  I had not read through the teriyaki sauce recipe so I didn’t realize it had to be cooked and cooled so that took a little extra time.  Also, wrapping the bacon around the chicken was a bit time consuming but I quickly figured out I could cut the bacon strips into fourths and then stretch them around the chicken piece and skewer through the bacon and chicken to hold the bacon on.  I used the center cut bacon and then stretching it a bit made sure it was thin enough to cook since I knew I would be baking these in the oven.    I put the skewers in a big 9x13 Pyrex dish and poured the sauce over them and rolled them around a bit to coat.  I put them in the fridge and rolled them around a couple of times more during the marinating process.   I cooked them for the 20 minutes stated then turned on the broiler to crisp things up a bit for a few minutes.  They were really good and perfectly done.  I didn’t roast the artichoke because I forgot to get one but I did have some cauliflower so I tossed that with some olive oil and salt and pepper and roasted in the oven while the skewers cooked.

Tarin's Rosemary Pork

I loved this recipe. It was so easy and delicious. I did everything the way they said to, but I doubled the balsamic/olive oil mixture to make sure there was good coverage for the meat. I was so glad that everyone posted that it took longer to bake because it was about 45 minutes for me too. I used a meat thermometer for the first time and everyone mentioned how perfectly cooked the meat was so it was a success!

Audrey's Chicken, salad & Dressing review

These are several of the recipes from the last couple of weeks.
Here is the Spicy Honey chicken. This was from several months ago, but oh well ;)
I really liked it and thought it had great flavor. I followed the recipe, but did cook it in the oven. It required lots of spices, but I only had to get the chipotle chili powder, so that was good.
Here's the Poppy seed dressing. I followed the recipe except I added less of the sugar & oil after reading Jacki & Leslee's reviews. I only used 1/2 cup of sugar & 1/3 cup of canola oil & it tasted great! This is probably my favorite homemade dressing :)
Here is my plate for Easter dinner. I fixed the Ribs from the cookbook and the Spinach Mandarin poppy seed salad. The salad tasted great & I followed Leslee's suggestion and just let people put together their own salads from all the ingredients. I also added the strawberries along with the mandarin oranges. Really great flavors in the salad and dressing. I plan on fixing this again :)

New Recipes!!!

We have been using our grill a lot already so I chose some recipes we could cook out there (or inside). Bacon Wrapped Teriyaki Chicken Skewers (117) that uses the Teriyaki Sauce (46). Also since we will already have the grill going I thought it would be fun to try the Fire-Roasted Artichokes (190).  I am not sure when was the last time I had artichokes!

Also I updated the recipe rotation on the right side.  We will try to remind you (text or email) a few days  before that it is your turn to choose.  Let us know if you would rather skip choosing a recipe.

Jacki’s Spinach Mandarin Poppy Seed Salad and Key Lime Tarts.

I made both of these recipes last night for dinner.  The salad was really good but I didn’t have any bacon so I omitted that.  I made the Poppy Seed Dressing which was delicious but had oh, so much sugar!  I actually added a bit less sugar than was called for and it was still really good so I could probably add even less next time.   I served it as a side dish to a salmon meal.  I made the Key Lime Tarts into a pie using a store bought graham cracker crust.  It was really easy to make.  I have been wanting to try this recipe to see how it compares to the one we made out of Robin Millers cookbook (the first one we cooked from).  I have used that recipe several times.  I thought this recipe was ok but I like the Robin Miller one better.  I forgot to put food coloring in the pie so it looks more like a  lemon pie.   These were fun recipes to try.

Poppy Seed Salad

I made this salad last night for dinner and it was really tasty.  The dressing was absolutely delicious, it does have a lot of sugar so I am not surprised! We did sort of a salad bar to assemble them and we used some shredded chicken as well.  I also added some strawberries, as I prefer those to the mandarin oranges. Very yummy! I am planning to make the dessert this weekend so I will post it then.

April 1st Recipe

Hi All.....

I have chosen the Spinach Mandarin Poppy Seed Salad (Pg. 76) with the Poppy Seed Dressing (Pg. 90). For a lighter dessert (well not light in the calories....maybe I should say Spring time dessert) the Key Lime Tarts (Pg. 228). I didn't choose a meat, but the book suggests grilled chicken. I think a rotisserie chicken would compliment nicely as well.

Leslee’s Catch Up

I have been slacking a bit with my cooking, and not just with the blog recipes:) I do have a few I haven’t posted about yet though.

The first was a long time ago but I made the cream cheese filled strawberries one night.  They were a fun little treat and Sean and I especially liked them. The strawberries I used weren’t super big but they ended up okay. I made it really easy on myself and just drizzled them with Hersey's syrup straight out of the bottle!

Next I made the apple cinnamon bread. I made a lot of changes to make it gluten free and I thought it tuned out pretty good.  I will try in with the pastry dough sometime though because it sounds much easier! No picture, it wasn’t too pretty!

Last, I finally made the mint brownies last weekend.  I used a gluten free brownie mix for the brownies themselves but followed the frosting recipe.  They were really good and everyone in the house enjoyed them! I will definitely make these again!

Audrey's Rosemary-Balsamic Pork Tenderloin & Carrot Cake

I paired it with Sweet & Savory Coconut Rice, as I hadn't cooked it earlier on. I thought that the tenderloin had good flavor & was easy to fix. Like Jacki, I did have to cook it longer than what it said. The rice was very tender & also had a nice flavor. I also cooked some fresh asparagus, yum yum :) & had a fresh salad.
Here's the carrot cake. I decided to make it into big cupcakes & gave them to Dana for her birthday cake. We both thought that they were very tasty. Since I didn't know if she liked coconut & raisins in cake, I omitted those ingredients. I would like to try it with both of those items the next time I fix the cake.
I really liked all three recipe's and plan on fixing all of them again! Hope that you get a chance to fix these and post them. I miss everyone posting their recipes ;)

Audrey & Dana's Pineapple Bacon Burgers, Sweet Potato Fries & Stuffed Apple-Cinnamon Bars

We decided to fix some of the recipes that we hadn't done to make a meal & then we used the cinnamon rolls for our dessert!

Here is my plate. Everything tasted great! We did decide that the next time we cook the sweet potato fries, to cut them a bigger size & to watch then closer in the oven :(
We thought that the burgers had a really good flavor & we really liked the flavor of the BBQ sauce(head country) & pineapple & bacon.
Here are the Stuffed Apple-Cinnamon Rolls fresh out of the oven. We had a little trouble getting the roll in the center of the pan cooked enough, so the outer ones cooked a little too long.
Here they are with the Glaze & ready to eat. I was really surprised at how good these tasted. We all liked them. We will cook all of these recipes again!

Audrey & Dana's Glazed Pork Chops with Apricot-Ginger Sauce & Strawberry Cheesecake Bars

I forgot to take pictures while we cooked, but managed to remember to take some while we were eating.
Here's the finished meal. Since the asparagus has been on sale & looking good, we went with that instead of the green beans. We followed the pork recipe and thought that it turned out really well.
I will certainly keep this recipe marked, since it was pretty simple to put together & just adding rice & a veggie, you have a very nice meal.
We also fixed the Strawberry Cheesecake bars, but I forgot to take any pictures. Everyone really liked them, but next time, we plan on baking the cookie, butter crust mixture for a bit before adding the cheesecake mixture. We also made the strawberry sauce & that was very simple to do also. Mine didn't look as nice as the picture in the cookbook, but they ate it anyway. They also tried it on ice cream & liked that also.

Audrey & Dana's Pork Tacos with Chili Verde, Soft Flour Tortillas, Pico De Gallo & Guacamole

Here is the Pork cooking in the Chili Verde. It was pretty straight forward to fix & we followed the recipe. I will have to say, it did help that there were two of us fixing these recipes ;) While one of us was cutting up the onions & pork mixture & then sauteing in the pan, the other was putting together the Chili Verde mixture. We only added around 2 cups of the broth & that was perfect. We didn't have to add any to the Verde mixture when it was blending. We did cook the mixture for awhile, while we finished fixing the other 3 dishes & that worked out good.

Here's Dana & Johnny working very hard cutting up all the veggies for the Pico de Gallo & Guacamole. She fixed the Pico de Gallo & then when she fixed the guacamole, I couldn't find good avocados, so we just used the pre mashed that you can find in the produce section. I think it tastes better with the fresh avocados though. Also, instead of chopping more onions, garlic & tomatoes for the guacamole, she just added some of the Pico de Gallo & that worked really well.

Here's the tortillas cooking. They cooked quickly and they had a good flavor. We thought that they were worth the effort to make them.
We really liked all 4 recipes & will fix these again. They do take a little time if you are doing them all that evening for dinner. I think that it would be a good idea to make the Chili Verde the day before or that morning. That would really help with that dish. That will leave you with more time for the fresh dishes. Also, the tortillas could be made earlier & then warmed up when you are ready to eat. I forgot to take pictures of our plates, but everyone liked the meal, yeah!!

Jacki’s Roasted Pork Tenderloin, Carrot Cake

We both thought these recipes were VERY good!   The carrot cake was delicious – moist, flavorful, and the frosting was  perfect.  I added all the goodies – coconut, walnuts and raisins.  I made half the recipe since there are only two of us and put it in an 8x8 inch glass Pyrex baking dish.  I cooked it for 45 minutes and it was plenty done.  It would have been fine with a few less minutes.  For the frosting I added vanilla but omitted the almond extract.  It was a quick and easy recipe for a nice dessert.  For the Rosemary-Balsamic Pork Tenderloin I used a 1.2 pound tenderloin and marinated it for about 5 or 6 hours.  The recipe said it would take about 20 – 25 minutes of cooking to reach 160 degrees but it took my tenderloin 45 minutes to reach that at 400 degrees.  I let it rest for 5 minutes as directed then sliced.  It was very moist, flavorful, and tender – cut like butter.   Very easy recipe for a nice dinner.  Sorry my pictures didn’t turn out better.

Kim's catch up

I forgot to take a picture of the mint chocolate brownies, but they were AMAZING!! By far the best mint brownies I have had, and one of the best dfesserts I've had as well. They were gone in about 2.2 seconds at my house.... I ate most of them :)

This was a really yummy meal. The roasted tomato pasta thingy. The picture is a little nasty because it was my third helping, yes, THIRD! I was surprised I liked it so much, but it had great flavor and it was even yummy the next day cold from the fridge.


The spaghetti and meatballs were probably my favorite meal so far!!! My family went CRAZY over them. The kids ate them like candy, and so did my husband! It was a HUGE hit at my house. I also made the garlic bread from the cookbook and it went really well with the spaghetti.


We made these on Valentines and thought they were a fun little treat! I wasn't flying over the moon for them though.


The orange chicken salad was delicious. I was pleasantly surprised! My entire family ate it and wanted seconds!


We thought the meat had a really yummy flavor and was very tender and good! The potatoes were fun because they were different, but the flavor wasn't amazing for me. I could have used more of a kick.

Tarin's Stuffed Apple Cinnamon Rolls

I had some extra time on Saturday and an extra apple so I thought I'd catch up with these. I also only made half a batch of the breadstick recipe and it was perfect. It filled up a whole pie pan so I'm glad I didn't make more. I used a red apple, actually it might have been a gala apple, not really sure though. I only used one and it made plenty filling, next time I'd like to try a green apple like they recommend though because felt like I wanted a more "apple" flavor. I tried using some almond extract for the glaze and didn't really like, the flavoring was just too overpowering.  Everyone really liked them though and they were the perfect size and something just different enough from cinnamon rolls that everyone was interested.

Jacki’s Stuffed Apple-Cinnamon Rolls

I made these rolls for breakfast this morning and I thought they were delicious.  Something just a little different.  I used the breadstick recipe on pg 30 for the dough.  I made a full recipe of the dough but I only needed half for use with the filling so I saved the rest of the dough to make pizza tonight.  For the filling I used Pink Lady apples because that is what I had.  I ended up cooking them for about 20 minutes but I think 18 would have been perfect.  They were really yummy with the apple filling.  This would be good with regular roll dough too.

Jacki and Leslee’s Glazed Pork Chops and Strawberry Cheesecake Bars

Leslee and kids are still visiting and we made these two recipes the other night for dinner.  I doubled the recipe for the Pork Chops and everyone loved them – even the little ones!  The only change I would make is I would add less chicken broth for a thicker sauce.  It was a pretty easy recipe to put together.  I served it with brown rice and broccoli.  The Strawberry Cheesecake bars were tasty but a lot of work.   We halved the recipe and put it in an 8x8 inch pyrex baking dish so it took a bit longer to cook.  We used gluten free shortbread cookies for the crust.  Even though we halved the bar recipe we made the whole recipe for the strawberry sauce and we used every bit of it.

Jacki and Leslee’s Pork with Chili Verde, Guacamole, Pico de Gallo.

Leslee is here visiting us and we made this meal a couple of nights ago and it was a big success.  The Pork with Chili Verde was rather fun to make and very good.  The only odd thing to me was there was so much sauce for the amount of meat.  I used a 2 # pork sirloin roast and just put it in the crock pot whole and let it cook all day in the sauce and then shredded it and put it back in to soak up the sauce.  Next time I would not add as much chicken broth – maybe only 2 cups.  We ran out of time to make the flour tortillas and just served it over rice.  We will complete the tortilla challenge soon though!   It was really good over rice because the rice soaked up the sauce.  The Pico de Gallo was very tasty as well as the Guacamole and they both went well with the pork verde.  We served it all with shredded lettuce and grated cheese.  It was a fun and tasty meal to make.   Our picture of the meal is on Leslee’s camera so a photo will be forthcoming soon but for now a pictureless review will have to do. 

Audrey's Pesto Pasta with Roasted Tomatoes & Fruit dip

Here is the Fluffy orange fruit dip. Very easy to make and it also tasted very good with different kinds of fruit. Its nice to have another dip to use. I made two batches and took one of them to a basketball get together and it was a hit!

This was a very easy meal to make. I followed the recipe, except I bought my pesto as I couldn't fine fresh basil in my local grocery stores.....
I really liked the flavors of the different ingredients together in this dish. I forgot to add my pesto to the pasta before adding the veggies, so it isn't as pretty as the photo in the book, but it still tasted very good! I think this also makes a nice little side dish. We had the leftovers later in the week with some rotisserie chicken and asparagus. I will make this recipe again ;)
